My top three is OsCommerce, Magento and Zen-cart. Magento is a little more complicated but lots of features to play with. I have played with Ubercart but it looks promising!

Actually, there’s a HUGE push right now to get VAT/GST stuff into Ubercart: http://drupal.org/project/issues/129292/term/989

afaik, that’s the one big remaining thing before the final 2.0 release.

WARNING! Ubercart still lacks in dealing with VAT/GST tax, which make Ubercart impossible to use legal in Europe, Australia, New Zealand and many other countries. So sad that the developers still don’t see the necessity to implement it. It would be a great boost for the whole Ubercart-project and the awesome Drupal CMS in general. At the moment Ubercart is a great but useless shopping-cart to a lot of people.

Currently working with Magento. Bit frustrating if you don’t know MVC but there is great functionality there

I’ve had great experiences with the urbercart/ drupal combo. It seems to generate much less bugs than some of the alternatives.

Ubercart because of all Drupal modules and easy modification you can do and Magento for the shop itself

I’d add WebAsyst Shop-Script. It has nothing to do with any CMS, but they have struck a balance between functionality and ease of use
